Mead is the new buzz among beverage hobbyists as more and more consumers start to make their own. Ken Schramm is the author of The Compleat Meadmaker, and has been involved in beverage hobbies since 1988.

Ken will speak about the history of human domestication of bees, leading up to the development of modern meadmaking. Modern meadmaking describes the application of our knowledge of yeast reproduction and metabolism, honey composition and the human senses of smell and taste to create genuinely delicious beverages. The presentation will include details on how to best ferment honey to achieve a clean, flavorful mead in a reasonable amount of time. Ken will also touch on the opportunities and challenges of the mead industry as it grown and matures in the domestic and international beverage alcohol market.
